I have set up a schedule to do a weekly backup. I do see the job, I have safesets for the days the backup is to be run. Does this mean the backups were done?

How about restoring a backup to another drive or subdirectory and looking at the files to make sure they're up to date and complete.

look at the file space left, and check the place where your backups are supposed to be saved and be sure they did that way. As far as whether or not they work... you'll just have to test em.

The safesets you see means that backups were created. However you may want to review the logs to ensure there was no errors. Depending on your OS, files may be open and locked, which would prevent Disksync/Evault from being able to copy some files.
I would try to encourage testing the whole backup/restore scenario. This way you can make yourself familiar with what to expect in the event of an actual failure.
