I am thinking about getting another server. For various reasons that I'd rather not start a flame war about, I won't be using Ensim any longer. However, I have always used Sendmail. If I install Sendmail on a CPanel or Plesk system, will my users be able to add and delete mail accounts using the control panel?

I think you would be making things difficult for yourself keeping up with normal control panel updates; unless you have a strong reason (sophisticated sendmail setup at present) I suspect it would be easier in the long run to come to terms with the software that is integrated standard with the control panel you choose.
