How do I configure MRTG to monitor CPU utilization of my network devices?

The documents have plenty of stuff on this. If you don't want to go through all the docs look at cacti which is basically a frontend that makes it very easy to do if you have to configure a lot of hosts.

What documents are you referring too?

Cacti.... also discovered Zenoss today (www.zenoss.com), looks very cool, not sure what data it shows yet, still looking into it.

I've used MRTG, Cacti, and recently discovered Zenoss also. After testing Zenoss, it was hands-down a winner.

Graphs/stats plus monitoring, with the ability to finely tune monitoring rules to your specific needs without a headache.

If you're interested, PM me and I can provide you with some screenshots of what it looks like for my environment.
