After my last upgrade on Ensim I am thinking of dumping Ensim and moving to another CP. Plesk looks very appealing, and I know that some of the other Ensim users migrated over. I was wondering how that experience was and if Plesk works better than Ensim. Are the upgrades easier and is it easy to keep your server up to date and secure?
Any feedback appreciated.

I would suggest cpanel over plesk.

I'm not sure how difficult it would be to migrate, but both plesk and cpanel should have tools to help migrate accounts off of ensim. You can check with sales or tech to make sure what you want to migrate to supports migration from the version of ensim you're using.
Although I haven't administrated an ensim server, personally I prefer running plesk over cpanel. We've already tried cpanel and migrated off of it to plesk. Both are good control panels so it's mostly just preference.
Btw, if you're concerned over upgrades, one of the issues I have found with plesk is upgrading components from the control panel which doesn't work all of the time so you may have to do some manual upgrades. If easy upgrades is a priority then you may want to consider cpanel since that seemed to work most of the time for us. Easy upgrades doesn't necessarily make cpanel more secure however.
