I'd like to know the answer to this also. Now that Plesk 8.0.1 for Linux is available, I've been considering updating from 7.5.4, but almost every update from the control panel fails and I don't want to submit a support ticket to update this to find out after it's broken that Plesk 8 updates aren't supported.
Well, Plesk initially broke somethings in the update to 8.0.0, but then fixed most of it in 8.0.1.
I would say its perfectly safe to upgrade, though I was told by TP that my installation of Plesk would no longer be supported by them.

Which is strange as originally when we had a new server it came with plesk 8. We then had to have it reimaged with plesk 7.5x.
Hence our request to have an official response.
