We are looking at setting up our own nameservers and had a few quick questions about how it should be set up at the registrar.

Say we are wanting to use ns1.ourdomain.com and ns2.ourdomain.com as
our nameservers. We would set up both of these at our registar to
point to 2 of our ip's?

As for the actuall nameservers for ourdomain.com, where do we point it to?
ns1/2.ourdomain.com? ns1/2.servermatrix.com?

Since we'll be using this domain for the sole purpose of nameservers
is it even necessary to point it anywhere as long as we have the ns1/2
setup to point to our server?

we're running RHE, cPanel incase that makes a diff.

create the nshr's with your domain registra

then you need to add those name servers to cpanel (edit setup or something similar,) also need to add the ips your using onto the box (if not already done so)

then once its done it should work after propogation etc

search the forums theres a few tuts on setting up name servers
