I looked in Plesk to stop the MySQL service from running, but there is no button under Server>Services
Also tried "/etc/rc.d/init.d/mysqld stop" and "service mysqld stop" from command line, but response was FAILED for both.

You have to use SSH:
service mysql stop
Plesk will not work without MySQL started as it is dependent on it.
