Got all my email stuff working - yea!
A question though. Under 'Server Management', 'Control Panel', 'Services', 'Email parameters' --> Relay for the following Hosts/Domains
my IP and rackshack.net are listed.
Does rackshack.net need to be there for some reason? Should my virtual or main domains be listed? Does the IP for the server need to be there?
Reading through the manual it looks like just a block of ip's from the internet service I am using as a dialup need to be listed,

You do not want ANY ISP IP's or domains. You have POP before SMTP, so you don't need to add any ISP's. If you add ISP's to your relay list, then ANYONE that uses that ISP can use your server to send SPAM. Then you will be blacklisted as a SPAMMER/Open Relay and you will be hate'n life.
You only want to add IP's and Domains from YOUR server. Add domains and IP's that you want to be able to send mail through your server.

Just make sure POP before SMTP is enabled some sites do not have it enabled by default.
