In the managed services bit of orbit when you're setting up monitoring it askes where the server is dllstxXX etc. The uplink router is shown as sm-car6-8.dllstx4, does that mean we're in dllstx4 (guessing it does)...?

I think this is how it goes:
dllstx1 = full of network equipment (mainly routing gear I think), next to dllstx2
dllstx2 = servers
dllstx3 = Equinix at InfoMart (more connectivity)
dllstx4 = servers
(I'm not 100% sure about dllstx1)

Well, considering any new datacenters will need connectivity to the other ones, if they add a third datacenter, DC5 would likely be equipment, and DC6 would be the next datacenter. So probably even numbers will always be for datacenters.
Unless, of course, in their next datacenter they put all the connectivity equipment right into the datacenter.
