I am in the process of setting up a server and want to offer email
to my clients. Although I do not intend to hsot any other sites, except,
mine, I was wondering what would be the nest wau to go.
It sounds lie MailENable Pro would be a good choice for a package, but should I add a control panel as well ?
Any thoughts welcome.

In fact, if the only thing you want to host are email accounts then there is really no need to install any control panel. Mail Enable Pro should handle all your email needs. It does come with its own Webmail module for you to use.
