It took me a while to figure this out, so I will share my experience with others.

First, SM support staff are very willing to help out by telephone -- a much higher level of service than I expected when I signed up. I submitted several trouble tickets, but one phone call to SM support (Karen, who was very knowledgeable and helpful) cleared things up for me.

1. When you create a new website ("domain", in the Plesk world), you submit a trouble ticket asking SM to create the zone for you on their dns server. Contrary to the activation email, they set it up on ns1.theplanet.com, not ns1.servermatrix.com. You need to edit your registrar to show theplanet as name server.

2. Their dns server is rebuilt 4x/day (12, 6, 12, 6), so it may take up to six hours before your zone is added.

3. Once your zone is added, you can tweak all the details (mx record, subdomains, etc) via orbit (Network/Domain Admin).
