i need to setup a CNAME for a subdomain. I dont want to actually create the subdomain through cPanel, but via DNS zone editing.

sub.domain.com 14400 IN CNAME newdomain.com.

that correct? is that all i need to is edit the DNS zone and add the above?

You can use the Subdomain section in your CPanel, here you can add the subdomain and set the redirection to a other domain, it's easy.
