I installed ART's spam-related rpms, such as:
spamassassin-3.1.0-4.rhel3.art
clamd-0.88.2-1.rhel3.art
clamav-db-0.88.2-1.rhel3.art
clamav-0.88.2-1.rhel3.art
qmail-scanner-1.25-9.rhel3.art
But, I've upgraded to plesk 8.0.0, and I don't think they're working anymore. What's the best way to safely remove these rpms and kill the spamd and clamd processes that are currently running?

yum remove
When you remove spamassasin it will tell you that it needs to remove qmail-scanner also and probably psa-spamassassin as well.

Actually, the thing is, I installed them using up2date, so I don't have yum. Is there a similiar up2date uninstall command?
I'm trying to remove them because they're not working with plesk 8.0.0. None of my mails have the X-Spam-Status: header that spamassasin inserts.

Then use rpm -e spamassassin qmail-scanner clamd

Is it okay to remove
psa-spamassassin-8.0.0-rhel3.build80060331.13
, which is a dependency of spamassassin?

Yes, you'll just have to reinstall it via the updater in the cp.

But do I have to re-install psa-spamassassin in the CP? Because my license doesn't support spamassassin, will installing it do anything?

No, you don't have to reinstall psa-spamassassin. That just gives the CP users a way to manage spamassassin. You can install yum and then install clamd from ART's site. I'd highly recommend this much, you can also install spamassassin and configure it for your server. Read ART's project info and check his message boards for more info. I've been running his packages on my 7.5.x box and will continure with his stuff when I migrate to 8 this month.
