While I have the utmost confidence in EV1Servers and Headsurfer and their preparation for Hurricane Rita, you should be prepared with your data just in case. I urge you to do an off site back up.
Windows has a back up application available. Please note it will not back up databases in use or similar applications. My suggestion would be to stop the database service and similar applications. You also can use a 3rd party application. A great free one with an FTP option is Cobain Back Up - http://www.educ.umu.se/~cobian/cobianbackup.htm. A nice tutorial on it is here - http://www.buzzys.net/backup.html (I have no relationship with this product but have it in use on dozens of servers.)
Finally – as mentioned in the beginning of this message, I know the EV1Servers will do everything they can to keep operations as normal as possible for our end. With that said, if your server goes offline, I urge you to give them a break and don’t rush to call them or post negative comments in other forums about their support. They will be doing everything they can.
