is it possible to set up an email redirection in plesk and have all incoming email forwarded to a specific email-adress outside the domain WITHOUT having the original mail stored on the server?

One of my customers wants to set up 20 email adresses which are all being forwarded to another adress but permanently gets the problem that all the mailboxes get full due to plesk is not deleting the mail after forwarding.

Sure! You set up the redirect and turn OFF the mailbox. Then the forward acts just like a true autoforward, never leaving a copy on the server. Of course, you run the risk of losing emails if the forwarded-to address has problems.
