I'm using Plesk 7.5.2 and i went through the whole process of requesting an SSL cert, getting the private key, etc. Now when I see the certificate listed in the domain, how do i get it so that it's the one that's used ?

Two things come to mind. All of this is from the Plesk control panel.
First go to Domains > the domain in question > the Setup icon. Make sure the correct certificate is chosen there. It may still be using the default cert for the server.
Another thing to check is to make sure the cert is bound to the IP number. To check that go to Server > IP Addresses > choose the IP the domain sits on > make sure the new cert is selected.
