I'd like to be able to mount my EV1 server from home to do backups locally. I've searched here and Googled some, but haven't really found much on how to do this and if it should be done... has anyone done this or can anyone point me in the right direction to do it?

How about using FTP or SFTP. You might be able to find clients like these fairly easily. It would also provide you better security as you never know with Samba.

samba with strict IP access rules in your firewall.
