How can I know what is doing so pag/sec, etc...?

I have try to stop some service when it happens, but sometime works and sometime no.

Open task manager and go to the processes tab. Choose "Select Columns..." under the view menu and that should give you more counters per process. Maybe it will help you track down what you are looking for.
