Is it safe to use up2date on RedHat ES / Plesk, making updates a nobrainer? I'm asking because it does not seem so with Ensim 3.1, at least I broke mine when updating ssh... What about CPanel and Ensim Pro?

Yes but put in the skiplist;
sendmail*;rpm*;spamassasin*;squirrelmail*;
Note that rpm* have been recently added because of the recent RPM upgrade from redhat have caused.. Anyway there is no vulnerability on these.. May be the problem will be resolved later on whit the Rpm module (or plesk itself) ..

Not needed.. There is no rpm from "psa" on up2date..
As for caching-nameserver, as you have see they skip the install because of different config file so its not usefull to add it on the skiplist...
