Can anyone PLEASE point me in the right direction. I need to update the packages in the application vault. Can anyone tell me what format to upload new ones in (this way I could just delete the old ones and install new ones), or how to upgrade the ones in there currently?

You will need to update your plesk package using the updater in plesk or manually using downloads from sw-soft.

Thanks so much for the reply.Can you possibly tell me where I would find the "updater in plesk"?
I did look on the sw-soft site for updated applications to no avail. My apologies if I am missing something stupid.

The Plesk update tool is only available in Plesk Reloaded(v.7) or newer. It is located under the the server section when you login under admin.
You can update Plesk manually using the downloads page at Sw-Soft.

Not knowing your level of experience with server admin, just be careful in doing a manual upgrade. It is not supported by EV1.
