-l only lists.. if you do up2date -u then it will update everything on your machine which it has updates for. Of course, make sure you --configure up2date first to have whatever settings you want (noreboot/nobootloader etc)

Well by default the kernel is skipped... so unless you have one of the control panels (ensim/plesk/cpanel) you *should* be ok just doing up2date -u
Since the default config specifies to reboot if needed, it will automatically reboot your machine if needed. You can change this by running up2date --configure then type 37 and press enter... Then you will need to type Yes and press enter. Then press enter again to save and exit the configuration. This has disabled the automatic rebooting. (Check again with up2date --configure
Personally I have rebooting off (item 37.. set to yes), I tell up2date to install kernel updates (item 9.. does not have kernel entries) and not to modify the bootloader config (item 12.. set to no).
Once again if you have a control panel installed (ensim/plesk/cpanel) make sure you check whether they have any special requirements.

Check the Plesk documentation for what you cannot upgrade. You have to add those things to the skiplist in up2date's config
