I am wanting to do a general 'cleanup' of the log files and various temp files on both my Plesk servers but i'm not sure where to start.

I would like to completely clear the current logs etc. and start afresh, same goes for temp folders and/or caching.

Any advice would be much appreciated.

You can delete all the .processed files in /home/httpd/vhosts/*/domain.com/statistics/logs. It's not advisable to delete the server log files.
