How can I install GD 2.0 JPEG for auto thumbnail generation
(PHP)?
Can I go to Software - Update Apache to auto install the GD?

Yep 
Simply compile apache/php with GD selected, freetype and any other image libs you like
or if you like to do it from shell (much better way) type /scripts/easyapache, and when it asks what build number, use "4"
