How are Mails handelt, what hapens if I give 10Mb to the user for
emails and the mailbox get full. Will cPanel erase the oldest mails?
or does the user get an error?

It won't erase old emails. When new emails come in, they will be bounced to the sender with an error message such as "disk quota exceeded".

I didn't find anything on the panel to configure this. Do I have
to do it on the shell??
Whould that be a configuration on Exim or Neomail?
