I need zip on my Cpanel server. I have gathered that I need to recompile PHP - but I am not quite sure how to do that - as it is not an option in the 6) Advanced option for the easyapache script?
A how to on this subject would be very appreciated.

zip? there are programs for zipping files that you can use
mod_gzip is used to shrink the stuff apache sends out, if you do mod_gzip I believe only have to recompile apache nothing to do with php.

Here's the steps to install Unzip so that you may unzip zip files on your server in Cpanel.
1) login to WHM
2) Click "Install an RPM" under "Software"
2) Click "Unzip"
you will now be able to zip/unzip files in Cpanel's filemanager.
If you were looking for instructions on installing mod_gzip, that is specifically for zip files fyi.

What I really am after is zip for PHP support (

This is what it says:
Zip support in PHP is not enabled by default. You will need to use the --with-zip[=DIR] configuration option when compiling PHP to enable zip support.
