I heard and confirmed that proftpd has a few rotable exploits and i really dont like the sound of that. So im going to install pureftpd.
I need to know how to Uninstall proftpd. And would this brake ensim?

ProFTP is configured to support Ensim's virtual domain structure - If you were to remove it and install another ftp daemon I expect there would be a lot of work to get it to work the same way.
I'd expect the latest version of ProFTP to not suffer from those security holes.

Can you upgrade to the latest version of ProFTPD on an Ensim 3.0 server?

I don't know about upgrading, but of course you could just disable it in CP.

I've only upgraded to the latest version provided by Red Hat Network - if there is newer version (I've not checked) I don't see why it could not be upgraded as long as the configuration was maintained.

If you really want to upgrade you could get the latest RPM from proftpd.org, unpack it, replace the existing binaries with the older ones.
Two things to keep in mind:
1. Don't delete the original files that you replace. Copy them with the '-p' switch to maintain the permissions.
2. You will have to stop proftpd while you copy the new proftpd binary.
Of course that brings us to the question: "If I can replace the binaries what the heck are Ensim RPMS doing?" Most probably they trim down whatever is not required. But as far as I know, the above should work. If people want I can test it out on a test server and see how it goes.
